Well, you could either look for a photo of a person with gray hair taken from the correct angle and superimpose it over the edited picture, although finding the photo might be quite difficult. You could also use a paintbrush, and under mode/setting (on one of the menu bars up top) go to either hue, saturation, or color, and play with those and combinations of other colors to turn the hair black. I have used this to turn skin brown, hair blonde, etc… Finding the correct color can be tricky though, so play around with it some.

Use the point-by-point selection tool to carefully select the hair then use the desaturate tool..alternatively you could use Hue/Saturation to change the colour of the hair and adjust the strength of the colour
